Ingredients
  

  • 1 lb ground chicken
  • 1 cup shredded cheddar cheese
  • ¼ cup almond flour
  • 1 large egg
  • 2 tablespoons chopped jalapeños fresh or pickled
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine ground chicken, shredded cheese, almond flour, egg, jalapeños, garlic powder, paprika, chili powder, salt, and pepper. Mix until well combined.
  • Roll the mixture into small, evenly sized balls (approximately 1½-inch diameter).
  • Arrange balls on the prepared baking sheet, spacing evenly.
  • Bake in the preheated oven for 18-20 minutes, or until golden and cooked through.
  • Allow to cool slightly before serving.

Notes

  • Serve with keto-friendly dipping sauces such as ranch or spicy mayo.
  • For less spice, reduce or omit jalapeños.
